Tommy Townsend is our founder, leading man, and the reason Grandaddy Mimm’s is servin’ up authentic moonshine today.
It wasn’t long ago that Tommy uncovered his grandfather’s old moonshine recipes. Back in the day, Jack “Mimm” McClure’s moonshine was a bit, well… illegal, but today Tommy makes it the same way with a few extra taxes.
“My go-to drink is peach shine on ice. Peach is one of Mimm’s original recipes, and I like to think it keeps me close to the original thing and close to my grandfather.”
“I love to buy folks a round of peach shine at the still when I’m there or if I’m on tour.
Back in the day, they called it peach brandy and fermented the peaches in barrels to add the flavor. These days we use natural peach juice to keep the process efficient.
I remember hearing stories of my mom stumbling down the hill as a kid seeing them fermenting the peaches and apples and wondering what they were up to.
My mom told me all kinds of stories about Mimm when I was little. When she was a girl, she'd be down in the barn with them and she'd ask what they were doing. ‘Oh honey,’ they’d say, ‘this is just what we feed our hogs and cows with.’”

We’ve heard people will make it at home with our blackberry moonshine instead of the regular stuff, and I’ll tell ya, I haven’t tried that yet, but I know a moonshine margarita is the best margarita I’ve ever had.
Every now and then I’ll make the Guava Colada, too.
The Moonshine Margarita is called the Redneck Margarita on our menu and it’s just about as easy to make as anything straight. Two ingredients and a lime are all you need.
